Tis the season to bake lots of Christmas cookies. Every year i spend an entire day in my kitchen...long into the night baking lots of cookies and making tins for all my friends!
Here is one of my favorites:
1 cup butter
2 cups flour
1 tsp vanilla
1 cup firmly packed brown sugar
1 egg yolk
8 oz semi-sweet chocolate morsels
Preheat oven to 350F. Use a food processor or mixer to combine butter, flour, vanilla, brown sugar and egg yolk. Press into an ungreased 10x15-inch pan. Bake 15 minutes. Remove from the oven; sprinkle with chips. Let stand several minutes to melt the chocolate; spread chocolate evenly over the surface. Let cool.
I usually don't like to put these in the fridge to cool because the chocolate can tend to turn white. Set them outside in the blistery winter air for a few minutes to speed up the cool time!!
