    World's Best Lasagna

    Ingredients:
    1 pound lean ground beef
    1/2 cup minced onion
    2 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
2 (6.5 ounce) cans canned tomato sauce
    1/2 cup water
    2 tablespoons white sugar
1 1/2 teaspoons dried basil leaves
1/2 teaspoon fennel seeds 1 teaspoon Italian seasoning
    1 tablespoon salt
    1/4 teaspoon ground black pepper
    4 tablespoons chopped fresh parsley
    12 lasagna noodles
    16 ounces ricotta cheese
    1 egg
    1/2 teaspoon salt
    3/4 pound mozzarella cheese, sliced
    3/4 cup grated Parmesan cheese

    Directions:
    1. Cook ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
    2. Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
    3. Preheat oven to 375 degrees F (190 degrees C).
    4. To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
    5. Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

Note: what I do with the noodles is I place them uncooked in 9x13 pan and pour boiling water over them and just let them sit for 20 min. and then drain and use. They aren't completely cooked and will finish cooking in the oven so they don't get so smushy. I also just usually  use 3 noodles going the long way instead of 6 going across

  • Woooooo what a great idea!!! I love it and I love it!!!
I love to cook and I do have some great my own recipes and can not wait to share and learn from others too. cheesy cheesy cheesy

  • Ok keep an open mind, this is weird but it is actually good.My cousin is an excellent, I mean supremo baker, recently she served these at a gathering and they were a hit.
    Black bean brownies
    1 box of brownie mix
    1 can of black beans
Puree the black beans thouroughly in a food processor (add about a half cup of water to bean mixture after processing)
Dump beans into large mixing bowl
dump brownie mix into bowl with black beans/water
Mix well by hand or mixer
    Spread into a greased pan
Bake as usual per instructions on brownie mix box
Cool, cut into squares and sprinkle with powdered sugar

They are good, they are healthier, you do not add eggs, oil or anything that the box says, BUT you can tweak them as you like,I would recommend adding nuts in the batter and on top too, (I like nuts)
This is a healthier alternative and offers a lot of fiber and will probably make you a little farty...tehehe embarrassed

  • Ally oops Cranberry cosmopolitan oven baked baby back ribs
I love cosmopolitans and I love cooking, its summertime so its barbque time too.
Heres my own recipe for sauce and ribs, you can use this sauce on other cuts of meat and chicken too.

1 can of jellied Cranberry sauce
    1 cup of orange juice
    1 cup of ketchup
    3 shots of Vodka
    A dash of cayenne
    A  big dash of ginger
Add all ingredients to a pot or double boiler if desired, roughly chop up the cranberry sauce and turn flame on to simmer, the cranberry sauce will melt, stir often and make sure it does not scorch (cover with a lid because it will bubble and dirty up your stove top) Simmer for about 20 minutes or until its all mixed and smooth. Set aside to cool.
You can refrigerate and use later if you wish.
Wash off 2 slabs of Baby back ribs, or whatever kind you like
Season with salt, pepper, garlic powder, onion powder, paprika (this is my "house" seasoning of choice, but use whatever your comfortable with)
Place in a roasting pan large enough to stretch them out and not crowd them, cover with lid or with heavy duty foil, making sure the pan is sealed.
Bake at 350 for about 2 hours,(maybe less depending on how fast your oven cooks)
When they are fork tender and starting to pull away slightly from bone, they are done.
Drench on front and back with Cosmopolitan Barbque sauce and bake uncovered for another 12 to 15 minutes. I usually serve these with a baked potato, corn on the cob and a salad.
Note; The alcohol will cook out when you simmer the sauce.

  • OMG You shoulda never started this thread cuz I got a lot of recipes!!

  • Easy Chicken Enchiladas.. This is my own recipe...

    One Whole Chicken
One Large can of Enchilada Sauce (red) you can use green as well, if you like alot of sauce get 2 cans
Grated Cheese a little or alot (whatever you like) I like using jack and cheddar
    Can of Black Olives (sliced)
One Onion (only if you like onion in them)
Corn Tortillas (i usually get the 3 dozen package)

Boil Chicken til done, shred chicken from bone
Heat up enchilada sauce pour over shredded chicken
Heat up tortillas on flame of stove, or in a pan (to make the tortillas a little softer you can fry them quickly in hot oil) i do this for mine
Roll up a big pinch of chicken, a little cheese, a few olives and (onion if you want) in tortilla place in a large square baking pan (each roll of chicken mixture in tortilla placed side by side ends facing down)
When pan is full, pour more sauce over chicken layer, sprinkle more cheese and sliced olives
Cover pan with foil and bake at 350 for about 15 minutes, until pipen hot!

Garnish with sour cream and gaucamole, and Whellah.. you got Chicken Enchiladas

    Easy Spanish Rice...
In a fry pan, place a little oil and chopped or sliced onion, add some rice (about a cup).. a pinch of salt and pepper, i always make alot of this because everyone loves it so for me i use 2 cups, fry rice and onion together until rice is a golden brown, i like to fry my rice a little darker then golden, for some reason it gives a better flavor, add a can of tomato sauce and 2 cans of water (this is for 1 cup rice double up if using 2 cups) you can add at this time if you want some chopped tomatoes, green pepper bring to a boil, reduce heat cover and simmer til liquid is absorbed stirring occasionally. Whellah Spanish Rice!

    Easy Gaucamole....
A few avacados, salt and some green chili taco sauce, and a lemon
Peel avacados and mush it up in a bowl, add the salt, green chili sauce, stir together top it with a little squeezed lemon juice.. Whellah Gaucamole!

  • If anyone is interested I have a recipe for making "home made" ravioli using eggroll or wonton wrappers....I know another weird one but they were a big hit when I made them and they are yummy.
Imagin.ation those chicken enchiladas sound really good,I'm gonna try them as soon as I can....mmmmm.

  • Awesome yummy recipes ally and imagin!

Here is one of my favorites:

    Taco Salad

    1 lb of ground beef
    Taco Seasoning mix
    1 can of black olives
    Shredded lettuce
    Cheddar cheese
    Kraft Catalina dressing
    Doritos

Brown ground beef and add a little less than half a packet of taco seasoning mix, like McCormicks or Lawreys. Drain ground beef well on paper towel and allow to cool. In a large bowl add ground beef, black olives, lettuce and cheddar cheese.

Right before serving add Catalina dressing. Enough to coat. Crush Doritos and add.

You can be imaginative and add anything you like to your taco salad. Originally the recipe did not call for the taco seasoning......but i thought it could use a little zip!!

This recipe also said to add ingredients all at once. Unless you don't anticipate leftovers, i crush Doritos in a small bowl on the side and let everyone add it to their liking. This keeps them crisp without sitting too long in bowl!

  •                                 Bacon wrapped tofu

    Bacon. Tofu. Two proteins...wow!
The salty bacon-ness of the bacon infuses the bland tofu, and the two marry together to become a tasty morsel that’s good hot or cold. It’s salty-crispy on the outside, soft on the inside. Tofu is one of the food that I can never live without it!!!

    *Ingredients*
        * 1 block firm tofu
        * Several strips of bacon, depending on the size. A leaner type bacon is preferred. You can even use proscuitto(ham).
        * Optional: brown sugar, soy sauce

    *Directions*
Drain the tofu, and wrap in several layers of paper towels. Place on a plate and put a board or another plate on top. Leave for a few minutes to drain some water out of the tofu. Unwrap and cut into bite sized pieces that are about the width of your bacon.

Wrap each piece in bacon, going around at least once so the ends overlap. You may need to cut the bacon.

Heat up a non-stick frying pan over medium-high heat. Put the bacon wrapped tofu pieces with the overlapping edges side down. Cook until crisp, then turn. Keep cooking and turning until done on all sides.

A sweet-salty variation is to add a little bit of soy sauce to the pan, and a sprinkle (maybe about 2 tsp.) of brown sugar; stir rapidly to melt the sugar, then turn the bacon-tofu in the sauce until the moisture has largely evaporated.

  • A very quick and easy recipe when you have that can o spam!

After it is done, grab a plate, scoop up some rice, spoon the spam over the rice.. Whellah!!

Even if you hate broccolli, you'll love these!

    Broccolli Patties

    olive oil
1 box frozen or fresh broccolli
    1/2tsp baking powder
    1/2c flour
    2 eggs
garlic powder and black pepper for seasoning

Cook broccolli until ALMOST done in boiling water

In small-med bowl, mix flour, baking powder, garlic powder, salt and eggs

Add drained and chopped broccolli and just a tad of the water from broccolli pot

mix (should look like pancake batter)

In hot oil, drop TEASPOONFULS of patty mix, and gently flatten as they cook.

Veggies should be grilled prior to dicing. Once grilled, dice for the salsa.
  • Wanda's Homemade Turkey and noodles.

I only make these once or twice a year, once after Thanksgiving and after Christmas, but you can use a chicken rather than a turkey.

I have spent about 20yrs trying to perfect my noodle recipe (I started young) Here is my version.

Noodles: For every serving use 1 egg, 1 Tbls milk, 1 cup flour. I will usually triple or qraduaple it. Beat eggs and milk together, add salt and pepper at this point. Mix in the flour.  Take and knead on a floured surface adding flour as needed until no longer sticky. Roll thin, adding even more flour if you need to. Take a pizza cutter and cut in narrow but long noodles. They will swell a great deal, so don't make them too big. I then take more flour and spread over the noodles and loosen them from one another. Don't be afraid of the flour.  Let them set on your counter

Okay now take the leftover turkey carcass and place in a BIG pot with enough water to cover it.  Boil it until the bones start falling away from each other.  Drain but keep the liquid. There will be floaties, so drain through a sieve. Take the carcass and pick all the meat off, you'll be surprised at how much you get. Return  the meat to the liquid and season your broth with salt and whatever else you like. When back to a boil, add the noodles a handfull at a time and stir so they don't stick. Cover and boil for about 10 min. Turn off and let sit covered until cool enough to refrig. over night. Take out the next day and reheat. This keep the noodles from burning and incorporates the flavors. Alot of work, but worth it for a cheap and tasty meal.

Same thing if you use a chicken but you'll get less meat.

  • Yummmmmmmmmmmy!

Thanks, I might give it a go...

    :-*

  • Please...Does anyone have a good recipe for homemade macaroni & cheese?  I'm really craving it!

  • I have a great recipe for mac and cheese.Been making it for years, so the measurements may be a little off.

Start with a basic white sauce.(flour,butter,milk). I usually use 2 or 3 tbs. butter.
    1 to 2 tbs. flour
    2 to 3 c. milk
melt butter, add flour, stir until smooth, add milk. Low heat stirring until medium thickness.
While still on low heat, start adding the cheese. I use Velveeta, as it makes it creamier.
I also add whatever other cheese I have in the fridge. Usually cheddar, jack, whatever you like.
Cube the Velveeta, and shred the others. About 2 cups or so.
Add until you like the taste. It also needs quite a lot of salt.Maybe a teaspoon or so.

Prepare your shells, whatever kind you like, drain, then alternate sauce and shells in baking dish.
Bake for about 30 to 45 min. at 350.
I have always topped it with hot dogs, cut in half and smokey links, around the edge of dish.

It has been a family favorite for over 50 years!!!

12 ounces jalapeno peppers, seeded and halved (around 16 or so whole jalapenos)
    milk
    all-purpose flour
    dry bread crumbs
    oil for frying

    Directions
1.In a medium bowl, mix the cream cheese, Cheddar cheese and bacon bits. Spoon this mixture into the jalapeno pepper halves.

2.Put the milk and flour into two separate small bowls. Dip the stuffed jalapenos first into the milk then into the flour, making sure they are well coated with each. Allow the coated jalapenos to dry for about 10 minutes.

3.Dip the jalapenos in milk again and roll them through the breadcrumbs. Allow them to dry, then repeat with milk and breadcrumbs again to ensure the entire surface of the jalapeno is coated.

4.In a medium skillet or frydaddy, heat the oil to 375 degrees F.  Deep fry the coated jalapenos 2 to 3 minutes each, until golden brown. Remove and let drain on a paper towel.

Note: after you coat them, but before you cook them, you can freeze them. They keep really well. Lay them in a single layer to freeze, then put into a ziplock bag to enjoy later. Simply remove from freezer and cook

I have a great recipe for mac and cheese.Been making it for years, so the measurements may be a little off.

    Chicken is coming up!!!
  • Mary Sue, it turned out great!  I had nothing but compliments so I'm passing them on to you!  Thank you so much!

  • Lips, I do I make a Belgium pancake (really more of a crepe)
again i don't measure so it's all by looks
take about 6 eggs and put them in a blender, look where they start and beat on high until double in size.
melt real butter about a half a stick and pour it in the eggs after beaten but do not turn them off
add about a teaspoon of vanilla to the mixture
then add about a tablespoon of oil
and a quarter cup of maple syrup
    a tablespoon of sugar
all while still beating the mixture
then add (slowly) flour until the mixture gets thicker but not too thick normally depending on the size of your eggs this will be about a cup

now in a hot but not too hot fry pan melt some butter to cover the pan
pour in your mixture slowly just enough to cover the pan and turn the heat down to med. when it looks like it is starting to cook on top and not runny flip the pancake, it should still look yellow never brown.

you can eat it this way after you flip it let it cook about a minute then roll it up and put powdered sugar on it!

or cut up strawberries and add whip cream to the top

but my favorite is before you roll it add choc chips and fold it in half and then add powered sugar then you get melted choc inside and it's to die for and that my friends will give you my grandmother's pancakes and you'll never eat regular pancakes again!

PS. do not make them as thin as a crepe and they should look yellow when done!

  • Lips if you want some really good Belgium choc go the a website Cote"D"Dor this is the best choc you'll ever eat!

  • Pecan Pie

    1 stick melted butter
1 cup  pancake syrup (butter or butter/pecan flavored is best)
    1 cup sugar
    pinch of salt
    1 tsp vanilla
    3 eggs
    1 cups pecans

beat the eggs in a medium bowl, then mix in salt, sugar and syrup. Next, slowly add the melted butter a little at a time. Finally add the vanilla. Arrange the pecans on the bottom of your crust.  Pour batter on top and bake at 350 for about 50 minutes

  • I'm bumping this thread after reading the posts in the BBQ bingo tournament.  Be nice to see some of your recipes.

  • These two desserts are to die for and so simple to make. The gooey butter cake recipe is from Paula Deens restaurant at Harrahs Casino in Tunica Mississippi.

    Gooey Butter Cake

    INGREDIENTS:

    Cake:
1 box (18 1/4 ounce) yellow cake mix
    1 egg
    8 tablespoons butter, melted (cooled)

    Filling:
1 package (8 ounce) cream cheese, softened
    2 eggs
    1 tsp. vanilla
    8 tablespoons butter, melted (cooled)
1 box (16 ounce) powdered sugar (or 3 1/4 cups)

Preheat oven to 350 degrees F
Combine the cake mix, egg, and butter. Mix well. Pat the
mixture into the bottom of a lightly greased 13x9-inch
    baking pan. Prepare filling.
In a large bowl, beat the cream cheese until smooth. Add
the eggs, vanilla, and butter and beat together. Next, add
the powdered sugar and mix well. Spread over cake batter
and bake for 40 minutes. Be sure not to over bake as the
center should be a little gooey.

                                    CHOCOLATE ECLAIR CAKE

2 large packages of vanilla instant pudding
    3 cups of milk
    1 8oz container cool whip
2 packages graham crackers (3 in a box)
1 tub chocolate frosting (I prefer milk choc)

Make the vanilla pudding according to package directions
using 3 cups of milk. Mix in the cool whip.

Layer in a 9x13 inch pan as follows:
Layer whole graham crackers (1st layer)
    1/2 of the pudding mixture
Another layer of graham crackers (2nd layer)
The remainder of the pudding mixture
Top with graham crackers (last layer)
Spread frosting on last layer of graham crackers.
Refrigerate. Best if you let it set for a couple
of hours, let the graham crackers soften.

  • Another favorite of mine. I make these every year at Christmas time. I always double the recipe.

    Peanut Butter BonBons

    Ingredients:

    1 cup peanut butter(18 oz jar=2 cups)
    1 stick margarine (melted)
    1 cup powdered sugar
1 1/2 cups crushed graham crackers
    1 12oz bag Nestles semi-sweet chocolate chips
    1/4 stick paraffin

Stir together the peanut butter, margarine, powdered sugar and graham
    crackers. Mix well.
Place in the freezer for 1 hour. Remove and roll into 1 1/2
inch balls. Freeze again until hard.
Melt the choc chips and paraffin in a double boiler. Dip the
frozen balls in the melted choc chips with a toothpick. Enjoy!

  • Sounds delicious but what is "1/4 stick paraffin"?

    blue

  • That chocolate eclair cake sounds delish! I might have to take up baking and make that cake.

  • Blue.....Paraffin is a household paraffin wax. It's used mostly for canning. But, it's also used in candies. In this case, it helps the chocolate harden once dipped. It does not have a taste and is safe to eat. It comes in big blocks usually 4 to a box.
    eyes

  • Hey Froggy, good news...No baking required so you're safe..lol
