  • No bake cookies

    2 cups white sugar
    3 tablespoons unsweetened cocoa powder
    1/2 cup margarine or butter
    1/2 cup milk
    1 pinch salt
    3 cups quick cooking oats
    1/2 cup peanut butter
    1 teaspoon vanilla extract

    Directions
    1.In a saucepan bring sugar, cocoa, margarine, milk, and salt to a rapid boil for 1 minute.  Make sure you have a good boil before timing. Also, it helps if you mix the cocoa with the sugar first.  Cocoa is hard to dissolve on its own in liquid.
    2.Add quick cooking oats, peanut butter, and vanilla; mix well.
    3.Working quickly, drop by teaspoonfuls onto waxed paper, and let cool.

  • That's a must-have cookie recipe! I love those is why I haven't made them in forever. I eat way too many of them.

  •                                     7 Layer Salad

    Ingredients:

    1 head of lettuce (or bag)
    1 cup celery, chopped
    1 cup green pepper, chopped
    1/2 cup green onion, chopped
    1 bag (or box) frozen green peas
    1 jar (quart) mayonnaise
    5 tablespoons sugar
    6 ounces cheddar cheese, shredded
    bacon bits

    Layer ingredients, starting with the top ingredient, in 9x13 dish.
    Lettuce first then celery, etc.
    Refrigerate at least 2 hrs


    This salad is so unlike your regular salads. The mayo/sugar is what
    makes it so yum smiley

  • Mt. Dew Apple Dumplings

    2 large Granny Smith apples, peeled and cored
    2 (10 ounce) cans refrigerated crescent roll dough
    1 cup butter
    1 1/2 cups white sugar
    1 teaspoon ground cinnamon
    1 (12 fluid ounce) can or bottle Mountain Dew



    Directions
    1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
    2. Cut each apple into 8 wedges and set aside. Separate the crescent roll dough into triangles. Roll each apple wedge in crescent roll dough starting at the smallest end. Pinch to seal and place in the baking dish.
    3. Melt butter in a small saucepan and stir in the sugar and cinnamon. Pour over the apple dumplings. Pour Mountain Dew over the dumplings.
    4. Bake for 35 to 45 minutes in the preheated oven, or until golden brown.

  • Eyesofgreen are you sure we don't live in the same house? I have made both the peanut butter bon bons and the 7 layer salad and they are awesome.

    Here is a 7 layer dip that i love and goes really well when you are having a party for an appetizer:

    You will need:

    A large platter and in this order spread (forgive me i don't know the proportions cuz i never measure this recipe and it depends on the size of your platter).

    1st layer: one can of refried pintos beans. This can be optional cuz a lot of peeps don't like them.

    2nd layer: guacamole but please make it fresh it is so easy.

    3rd layer: sour cream

    4th layer: grated cheddar cheese

    5th layer: grated jack cheese

    6th layer: grated lettuce

    7th layer: diced tomatoes and black olives.

    Please note when layering to leave an inch on the outside rim of each layer. This will show each layer without it being hidden.

    Tortilla chips or Frito Scoops to dip.

    Sooooo yummy.

  • Not a recipe but a tip for when you are making meatloaf.  Place slices of bread on the bottom of your loaf pan and then put the meatloaf on top and bake as usual.  The bread absorbs all the fat from the cooking meat, but the meatloaf retains it's flavor.  I do this all the time and love it.  You can use a cheaper blend of hamburger without worrying about it swimming in grease.

  • Chipotle Chip or Veggie Dip

    1 cup Light Or Fat Free Mayonnaise, Or More As Needed
    ¨ö cups Light Or Fat Free Sour Cream
    2 Tablespoons Canned Chipotle Peppers In Adobo Sauce, Finely Diced
    1 Tablespoon Adobo Sauce From Canned Chipotle Peppers
    2 teaspoons Sugar, Or More As Needed
    ¨ù cups Diced Green Onion, Any Onion Will Do
    ¨÷ cups Sweet Relish

    Mix all ingredients in a bowl until smooth and well blended. If too spicy, mix in additional 1-2 tablespoons mayonnaise and 1 teaspoon sugar.

    Chill until ready to serve. Delicious dip for tortilla chips, vegetables, crackers or as a sauce for fish tacos.

    Yields approximately 2 cups

    I am chip & dip addict...tried a twelve step program but just couldn't kick it.  This dip recipe is so absolutely wonderful that I'm afraid I'll never kick the habit now....although dipping veggies in it is pretty darned good, just not the same crunchy...salty...fattening "fix" though.  You can make this as hot or mild as you like, just have to tweak it a bit with the Chipotle peppers.
